A.O.C. Haut Medoc; Cru Bourgeois status reconfirmed in 2004. The Vineyard soil is composed of gravel, galet stones and sand with a clay-limestone base. The average age of the vines is 35 years. Production: 150,000 bottles. Vinification practices: Removal of any split juice, bleed of vats (between 5% and 10% of overall volume), pre-fermentation cold maceration for 48 hours (to extract aroma and colour), alcolholic fermentation in cement vats, separating press wine lot by lot, malolactic fermentation. Ageing: 12 months in oak barrels, blending begins after six months by careful tasting and analysis, clarifying with egg white.

Cape Jaffa \\\”Siberia\\\” Shiraz 2002 was an outstanding vintage, hence the production of this wine which is only produced in exceptional years. The fruit comes exclusively from one vineyard which we call \\\”Siberia.\\\” The cold and windswept nature of the site produces small berries with intense colour and flavour and a distinctive spiciness. Production is limited to around 500 cases or 20 barriques. The 2002 Siberia Shiraz was fermented in open top concrete tanks, where it was hand plunged three times a day before careful extended maceration on skins for six weeks. It was matured in new French oak barriques for 24 months before a light natural egg white fining (hand separated!). Ripe mulberry dominates the palate with hints of toasty oak, black pepper and dark plums. The wine has excellent fruit intensity and depth of flavour and will go well with red meat dishes or with blue cheese. This wine will age gracefully in the bottle for about 10 years. Rob Dobson Notes on Cape Jaffa ‘Siberia’ Shiraz 2002: “Siberia’ refers to a small section of the Cape Jaffa estate vineyard.  This rocky knob is exposed to the cool breezes blowing off the ocean.  As a result, the pickers christened this parcel of vines “Siberia” because it is so barren and chilly.  These struggling vines yield a small amount of intensely flavoured grapes.  Winemakers Derek and Anna Hooper produce this wine only in exceptional vintages and just 20 barrels (about 500 cases) of this wine were made. It was fermented in open tanks, where the floating cap of grape skins was punched down by hand (pigeage) three times a day before an extended maceration on the skins for six weeks to extract maximum colour and flavour.  The wine was then matured in new French oak barriques (possibly Limousin or Nevers oak with a medium to heavy toast) for an astonishing 24 months.  It was fined with natural egg whites before bottling.  In the glass, this Shiraz is very dark, with lifted aromas of black cherry jam on toast, cocoa and smoky oak.  There are deep, intense flavours of B.C. cherries mingled with freshly ground white pepper.  The finish lasts almost a minute.  Huge lashings of classy French oak tend to slightly overpower the massive fruit at this point in the wine’s evolution, but with more age this serious wine should pull itself into balance.  This is delicious now, but it would be interesting to put a few bottles away to track its evolution over the next decade or so.

Benson Cabernet characteristics.  On the palate there’s a full bodied, rich berry fruit, well integrated spicy oak from 18 months aging in French barriques.  Enjoy now until 2010. Our favourite food match:  slow cooked lamb shanks.

Our Winery: Our winery was built between 1993 and 1994 and was literally dug into the side of a limestone ridge. This has created the perfect climate for aging our wines with respect to temperature control and humidity. The winery itself is medium-sized by Australian standards with a capacity to crush up to 1000 tonnes. The majority of our wine production is extremely ‘hands on’ with limited automation as part of our commitment to quality and uniqueness of style. Approximately half of the red wine fermenters are open concrete rainwater tanks which we plunge by hand. Winemaker: Derek Hooper; Assistant Winemaker: Nigel Westblade Derek Hooper studied at Roseworthy in 1991. Before establishing Cape Jaffa Wines, he gained extensive experience at world renowned wineries, including Domain de Chevelier in Bordeaux, Chapoutier in the Rhone Valley and Leconfield in Coonawarra, South Australia. Nigel Westblade has been with Cape Jaffa since the 2003 vintage. He studied winemaking at Adelaide University and has since worked at various wineries around Australia and overseas including Delatite Winery in Victoria’s highlands, Tahbilk in Nagambie and Chateau Ste Michelle in Washington State. Our Vineyard: The vineyards at Cape Jaffa were first planted in 1993. The site was selected not only for its cool climate, but also for the famous terra rosa soil over limestone, ideal for premium grape production. The majority of the vineyard is bilaterally trained, spur pruned and vertically shoot positioned to increase sunlight exposure. Vines are drip irrigated during the growing season. The constant sea breeze during the growing season reduces disease pressure, making the area well suited for sustainable and/or organic viticulture. Since establishment, we have been conscious of our environment and have endeavoured to keep all vineyard inputs ‘clean and green’ as much as possible. Our plans for the near future are to convert the vineyard to biodynamic management.

A medium to full-bodied blend with a brick red colour. Spice and red berry aromas are rounded off with chocolate and coffee on the palate.
